Step 1
Preheat the oven at 180 degrees.
Put the butter and beer in a saucepan. Bring them just to the boil. Remove the pan from the heat. |

Step 2
Add the flour and the salt and beat. When the dough is smooth, return the pan to the heat until it is dry, forms a ball and pulls away from the side of the pan. |
Step 3
Then place the dough in a glass bowl. Add the beaten eggs, one at the time, and beat well after each addition. It is important that the eggs do not get cooked. |

Step 4
Continue beating until paste is thick and shiny. Then fold in the grated cheese and once this is done, fold in the cubed cheese. |
Step 5
Place small mounds of the dough on a baking sheet, leaving enough space in between each ball to allow them to expand. |

Step 6
Bake at 180 degrees for 20 minutes or until golden. Then, turn out onto a rack and allow to cool. |
Step 7
Serve with a glass of your favourite icy cold beer |
