How to make a Berry Coulis

A simple technique showing how to make a Berry Coulis, a versatile fruit sauce that can be used to infuse berry flavours or accentuate your dishes presentation.

Coulis Ingredients

Ingredients and Special Equipment

  • 200g Mixed Berries, Fresh or frozen.
  • 2 Tbsp Sugar
  • 30ml Brandy (optional)
  • Hand Held Blender

Directions

Step 1

Place the ingredients in a saucepan and cook on a medium heat for about 5 minutes.

The sauce can now be used in recipes such as our Yoghurt Pancakes where the textures of the whole berries really add to the dish.

Blend the coulis

Step 2

Transfer the contents of the pan to the bowl of a liquidizer and blend the contents until they are of an ever consistency

Step 3

Place a fine mesh sieve over a bowl. Pour the coulis into the sieve and work it through with the back of a spoon making sure to catch all the liquid in the bowl.

Step 4

The sieving process will remove all of the seeds and other debris leaving you with a nice smooth Coulis.
