Homemade Wild Berry Chocolate Chip Ice Cream
Beautiful berry flavours combined with rich dark chocolate pieces make this one of my favourite ice cream recipes of all time. |
Ingredients |
1 Cup of Milk
½ Cup Sugar
2 Cup of thickened Cream
1 tsp vanilla paste
100g Dark Chocolate |
For the Berry Coulis
200g of Mixed Berries for Coulis
2 Tbsp Sugar
30ml Brandy (optional) |
Special Equipment: Ice Cream Maker |

Step 1
Make a berry coulis as per our How to make a Berry Coulis page. |
Step 2
Chop up the Dark chocolate to be used as chocolate chips. |

Step 3
Add the remaining ingredients along with the Coulis to a bowl and mix until the sugar has dissolved. If making the ice cream immediately, cover and refrigerate until you are ready to use it. |
Step 4
While serving, add the chocolate chips to the ice cream. If your ice cream maker has a mix ins compartment you can use that otherwise just pour a few in sporadically as the ice cream comes out of the machine. |

Irish coffee Ice Cream
A great strong coffee flavour with a hint of whisky coming through. |
Ingredients |
1 Cup of Milk
½ Cup Sugar
1 Cup of thickened Cream

1 Tbs of instant coffee
1 tsp vanilla paste
30 ml Whisky |
Special Equipment: Ice Cream Maker |

Step 1
Put the dry ingredients into a bowl. |
Step 2
Add the remaining ingredients and mix until the sugar has dissolved. If making the ice cream immediately, cover and refrigerate until you are ready to use it. |

Step 3
Put the freezer bowl into the ice cream maker and pour in the mixture before turning on the machine. |
Step 4
It should take about 15 to 20 minutes to freeze. Start checking the consistency after about 12 minutes to see if it’s ready as if it hardens too much you will have problems serving the ice cream.
Once ready, serve immediately or put it into a container with a lid and store in the freezer. |
