To my opinion, Pata Negra also known as “Jamon Iberico” is one of the finest hams in the world: it just melts in the mouth. This recipe compliments the sweetness and nuttiness of this beautiful ham. A real treat for Christmas or parties any times of the year!

Ingredients
2 small Pears
10 g Butter
1 tbsp Red wine vinegar
1 tbsp Brandy
1 heaped tsp of Dijon mustard
8 slices of Pata Negra cut in half
150g of Gorgonzola (or any other blue cheese)
A few rocket leaves

Directions
Cut the two pairs into in 8 wedges each and remove the core.
In a large frying pan, melt the butter, then add the pear wedges and cook them until slightly brown. Then, deglaze the pan with the vinegar and brandy. Cook until the liquid has reduced by half or has become syrupy. Add the mustard and stir gently. Leave the pears aside to cool.
To prepare the canapés, place a slice of Pata Negra, and then place a rocket leave, a piece of pear and a piece of gorgonzola.
Finish by wrapping the ham around the other ingredients and secure with a toothpick.
