Rocky Road

When people ask me how I got started making chocolates, I point to this recipe, Rocky Road. I had been eating it for as long as I can remember but it wasn’t until I decided to make it myself that it got me interested enough to make the switch from just eating to working with chocolate.

Being quick and easy to make, tremendously flexible in that you can add whatever ingredients you like or have to hand and being visually impressive on the plate, it ticks all the right boxes and I hope you like it as much as I do too.

Ingredients

100g Turkish Delight
100g Marshmallows
50g Macadamia Nuts
50g Cashew Nuts
375g Dark Chocolate

Directions

Melted Chocolate

Step 1

In a large bowl, melt the chocolate in a microwave using 30 second bursts at 30% power.

Step 2

Add all the other ingredients to the chocolate and mix together until they are all completely coated.

Mix all ingredients together
Pour into tin.

Step 3

Pour the mixture into a rectangular cake tin and push it out so that it is a reasonably uniform one inch (2 - 3cm) in thickness before setting it aside to set.

Depending on your room temperature, this could take an hour or more.

Step 4

To serve, turn the Rocky Road out onto a board and cut into pieces roughly one inch (2 - 3cm) thick.
