Rocky Road Ice Cream Sundae

You know, I don’t think I’ve ever actually come across anyone who doesn’t like Rocky Road. The mix of Nuts, Marshmallow, Turkish delight and Chocolate make for a treat that’s hard to resist. With all that’s good about the Rocky Road flavour combination and following on from our visit to the Bundaberg Rum Distillery where we found their Royal Liqueur we decided to try and adapt the concept and make an almost intoxicating Rocky Road Ice Cream Sundae.

Ingredients

For the Sundae
Chocolate ice cream (2 or 3 scoops per portion)
80g Turkish delight
12  Marshmallows
12 pitted black cherries
50g Chopped macadamia nuts to decorate
Whipped cream to decorate

For the Chocolate sauce
100g dark chocolate buttons
100ml thickened cream
75g raw sugar
1 tbsp Bundaberg Royal liqueur (optional)

Directions

Place the cream, the sugar and the liqueur in a heavy-based saucepan. Heat gently until the sugar has dissolved before bringing up to boiling point.

As soon as you reach boiling point, remove from the heat and stir in the chocolate. Continue stirring until the chocolate has completely melted.

Put the chocolate sauce aside to cool until lukewarm.

Place a tablespoon of the sauce at the bottom of a glass. Then add 2 or 3 scoops of your favourite chocolate ice cream. Top with the ice cream with pieces of Turkish Delights, marshmallows and cherries.

To finish add a few tablespoons of the chocolate sauce. Before serving, decorate each glass with a dollop of whipped cream and a few chopped macadamia nuts and garnish with something green.
