Prepare the lemons. Use a sharp paring knife to cut the lemons in half using a zigzag pattern before slicing of the base of the lemon so as to give it a flat bottom. Make sure to remove any pips from the cut surfaces.
Make a shallow circular bed of rock salt on each of your serving plates. The salt allows the oysters to sit on the plate without tipping over thus allowing you to preserve the juices.
Place half a lemon in the centre of the rock salt bed. Next, arrange the six oysters evenly around the lemon and finally garnish with a sprig of parsley.
Tip: Six Oysters makes for a good entree serving however you can easily double the quantities to allow for the more traditional dozen Oysters per person if you are looking for a more substantial meal.
