How to Make Mayonnaise

Our simple technique showing how to make your own fresh, creamy Mayonnaise

Ingredients

1 egg yolk
1 small tbsp of Dijon mustard
150 ml of olive oil
Salt and Pepper to taste

Directions

In a bowl, mix the egg yolk and the Dijon mustard with a whisk. Mix them until well combined.

Start adding the oil
Continue mixing

Add a small drop of olive oil to the egg mixture and whisk it in.

Add a few drops of olive oil at the time and whisk well each time. You will then notice that the mixture is starting to thicken. At this stage you can start to add larger quantities of oil to the mixture.

Note: If the mayonnaise curdles: Put a fresh egg yolk in a clean basin. Add the curdled mixture to that drop by drop mixing thoroughly, then carry on with the remainder of oil.

That's it, it's that simple. That's how you make fresh, beautiful creamy mayonnaise in just a few minutes.
